For the Whipped Feta and Cream Cheese:

  • 300g cream cheese (preferably full-fat)

  • 200g feta cheese

  • 3 tablespoons olive oil

  • Zest of 1 lemon

  • Salt & pepper, to taste

For the Basil Tomato Topping:

  • 250g cherry tomatoes, chopped

  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • 5g fresh basil, finely sliced

  • Salt & pepper, to taste

Toppings:

  • 1 tablespoon balsamic glaze


Instructions

  • Make the Whipped Cheese Base:
    In a food processor, blend the cream cheese, feta, olive oil, lemon zest, salt, and pepper until smooth and creamy. Taste and adjust seasoning as needed.

  • Prepare the Tomato Topping:
    In a bowl, mix the chopped cherry tomatoes, olive oil, minced garlic, basil, salt, and pepper. Let sit for a few minutes to let the flavors meld.

  • Assemble the Dip:
    Spread the whipped cheese on a shallow serving plate or dish. Spoon the tomato mixture over the top.

  • Finish & Serve:
