Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Cut zucchini into fry-sized sticks, keeping them even in size.

In a large bowl, mix panko, Parmesan, garlic powder, basil, salt, and pepper.

Whisk eggs in a shallow bowl.

Dip each zucchini fry into the egg, then coat in the breadcrumb mixture.
