Ingredients

Scale

Zucchini Fries

  • 2 zucchinis

  • 1 cup panko breadcrumbs (50 g)

  • ½ cup grated Parmesan cheese (55 g)

  • 1 tablespoon garlic powder

  • 1 tablespoon dried basil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 2 eggs

Greek Yogurt Chive Dip

  • 1 cup plain Greek yogurt (285 g)

  • 1 tablespoon lemon juice

  • 2 tablespoons fresh chives, finely chopped

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  • Cut zucchini into fry-sized sticks, keeping them even in size.

  • In a large bowl, mix panko, Parmesan, garlic powder, basil, salt, and pepper.

  • Whisk eggs in a shallow bowl.

  • Dip each zucchini fry into the egg, then coat in the breadcrumb mixture.

  • Place fries in a single layer on the baking sheet.

  • Bake for 15–20 minutes, flipping halfway through, until golden brown and crispy.

  • While baking, prepare the dip: stir together Greek yogurt, lemon juice, chives, salt, and pepper in a small bowl. Chill until ready to serve.

  • Serve hot with the chilled dip. Enjoy immediately!

Notes

  • For extra crispiness, pat the zucchini sticks dry with paper towels before breading.

  • Want more kick? Add a pinch of cayenne or smoked paprika to the breadcrumb mix.

  • Gluten-free? Swap in gluten-free panko.

  • The dip can be made ahead and kept in the fridge for up to 3 days.
