Ingredients

• 1 ripe avocado
• 1 teaspoon lemon juice
• 2 tablespoons crumbled feta cheese
• ¼ cup cherry tomatoes, halved
• 1 tablespoon balsamic reduction
• Salt and pepper to taste
• Red pepper flakes to taste
Instructions
1. Toast two slices of your preferred bread until golden and crisp.
2. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl.
3. Add lemon juice to the avocado and mash with a fork until mostly smooth.
4. Spread the mashed avocado evenly onto the toast.
5. Top with crumbled feta and halved cherry tomatoes.
