Ingredients
• 1 ½ pounds cod loin fillet, patted dry
• 2 tablespoons olive oil
• 4 tablespoons lemon juice (fresh)
• 4 cloves garlic, minced
• Salt and pepper to taste
• ¼ cup butter, diced
• 1 small lemon, sliced (optional)
• Chopped fresh parsley (optional, for garnish)
Instructions
1. Preheat oven to 400°F and grease a medium baking dish.
2. Arrange seasoned cod fillets in the dish, skin-side down.
3. Whisk together olive oil, lemon juice, garlic, salt, and pepper.
4. Pour lemon-garlic mixture evenly over the cod.
5. Dot cod with diced butter and top with lemon slices.
