Description

This easy and cheesy Baked Zucchini and Cheese recipe is the ultimate cozy side dish! Fresh zucchini, juicy tomatoes, and melty mozzarella come together in just 30 minutes for a colorful, comforting bake that’s anything but boring. Perfect for weeknights, holidays, and everything in between!

Ingredients

Scale
  • 2 large zucchinis, diced

  • 1 onion, chopped

  • 1 cup grape tomatoes, halved

  • 1 green bell pepper, diced

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon salt

  • 1 teaspoon fresh cracked black pepper

  • 1 cup grated mozzarella cheese (divided)

  • 1 tablespoon parsley, for garnish

  • 1/2 teaspoon crushed chili pepper flakes, for garnish

Instructions

  • Preheat your oven to 375°F (190°C).

  • In a baking dish, combine diced zucchini, chopped onion, halved grape tomatoes, and diced green bell pepper.

  • Sprinkle with garlic powder, Italian seasoning, salt, and black pepper. Drizzle with olive oil and toss with half of the shredded mozzarella until evenly coated.

  • Spread the veggie mixture evenly and bake uncovered for 20 minutes, or until zucchini is almost tender when pierced with a fork.

  • Remove from the oven, sprinkle the remaining mozzarella on top, and bake an additional 10 minutes, or until the cheese is melted and lightly browned.

  • Garnish with fresh parsley and crushed chili pepper flakes. Serve immediately and enjoy!

Notes

  • Try swapping in yellow squash or adding mushrooms, spinach, or cooked chicken for fun twists!

  • For extra cheesy goodness, use fresh mozzarella slices instead of shredded cheese.

  • Best enjoyed fresh, but leftovers can be stored in the fridge for up to 3 days.

  • Spice level is mild — adjust the chili flakes to your liking!
