Ingredients

- 1 pint of blueberries
- 2 peaches, sliced
- 4 oz feta cheese, crumbled
- 4 cups salad greens (baby spinach, arugula, or spring mix)
- 1/4 cup walnuts or pecans (optional)
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the salad greens, blueberries, and sliced peaches.
- Add crumbled feta cheese and nuts if using.
- In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill before serving for maximum freshness.
Notes
For a different twist, try adding cucumbers, red onion, or roasted seeds. Prep the ingredients ahead, but don’t mix until shortly before serving to keep it fresh.
