Description

A refreshing summer salad combining sweet blueberries, peaches, and creamy feta for a flavor explosion.


Ingredients

  • 1 pint of blueberries
  • 2 peaches, sliced
  • 4 oz feta cheese, crumbled
  • 4 cups salad greens (baby spinach, arugula, or spring mix)
  • 1/4 cup walnuts or pecans (optional)
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, blueberries, and sliced peaches.
  2. Add crumbled feta cheese and nuts if using.
  3. In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.

Notes
