Description
Brie and Blackberry Jam Grilled Cheese is a quick and comforting vegetarian sandwich made with creamy Brie, tangy blackberry jam, whole-grain mustard, and rosemary, toasted until golden in just 15 minutes.
Ingredients
• 1 tablespoon blackberry jam
• 1 teaspoon whole-grain mustard
• 1/2 teaspoon finely chopped fresh rosemary
• 2 slices whole-grain sandwich bread (preferably country-style)
• 3 slices Brie cheese (about 2 ounces)
• Cooking spray
Instructions
1. Stir together blackberry jam, mustard, and rosemary in a small bowl.
2. Spread the mixture evenly on one side of a bread slice.
3. Layer Brie slices on top of the spread and cover with the second bread slice.
4. Coat a small nonstick skillet with cooking spray and heat over medium-low.
5. Spray the outsides of both bread slices with cooking spray.
6. Place the sandwich in the skillet, cover, and cook until golden on the bottom (about 3 minutes).
7. Flip, cover again, and cook until the other side is golden and the Brie has melted (2–3 minutes).
8. Remove from skillet, slice diagonally, and serve hot.
Notes
– You can substitute raspberry or fig jam for a different flavor twist.
– Sourdough or seeded multigrain bread also works beautifully.
– Skip the rosemary or swap for thyme if you prefer a milder herb note.
– Pair with a simple salad or tomato soup for a complete meal.
– Best enjoyed fresh; reheating in a skillet keeps bread crispy.
