  • 1 baguette or Italian loaf, sliced into ½¾” thick slices

  • 3 tablespoons olive oil, divided

  • 12 garlic cloves, peeled

  • 23 cups cherry tomatoes, halved

  • ¼ red onion, very thinly sliced

  • ½ cup fresh basil, chopped or torn

  • 1 tablespoon balsamic vinegar

  • Kosher salt and black pepper, to taste

  • Flaky salt, balsamic glaze, more olive oil, and extra basil for garnish

  • 12 balls burrata cheese


Instructions

  1. Toast the Bread
    Brush bread slices lightly with 1 tablespoon olive oil and toast in a skillet, oven, or on the grill until golden and crisp. While still warm, rub one side of each piece with a peeled garlic clove.

  2. Make the Tomato Topping
    In a bowl, toss together cherry tomatoes, red onion, basil, remaining 2 tablespoons olive oil, balsamic vinegar, salt, and pepper. Taste and adjust seasoning as needed.

  3. Add the Burrata
    Gently break open the burrata. Arrange toasted bread (garlic side up) on a serving platter and spoon a bit of burrata onto each slice.

  4. Assemble
    Top with the tomato mixture, then drizzle with more olive oil and balsamic glaze. Finish with a sprinkle of flaky salt and fresh basil.

  5. Serve
    Enjoy immediately while everything is fresh and flavorful!
