1 baguette or Italian loaf, sliced into ½–¾” thick slices

3 tablespoons olive oil, divided

1–2 garlic cloves, peeled

2–3 cups cherry tomatoes, halved

½ cup fresh basil, chopped or torn

1 tablespoon balsamic vinegar

Flaky salt, balsamic glaze, more olive oil, and extra basil for garnish

1–2 balls burrata cheese
Instructions

Toast the Bread
Brush bread slices lightly with 1 tablespoon olive oil and toast in a skillet, oven, or on the grill until golden and crisp. While still warm, rub one side of each piece with a peeled garlic clove. -
Make the Tomato Topping
In a bowl, toss together cherry tomatoes, red onion, basil, remaining 2 tablespoons olive oil, balsamic vinegar, salt, and pepper. Taste and adjust seasoning as needed. -
Add the Burrata
Gently break open the burrata. Arrange toasted bread (garlic side up) on a serving platter and spoon a bit of burrata onto each slice. -
Assemble
Top with the tomato mixture, then drizzle with more olive oil and balsamic glaze. Finish with a sprinkle of flaky salt and fresh basil. -
Serve
