- 2 ripe avocados
- 1 cup fresh mozzarella balls
- 1 cup cherry tomatoes, halved or quartered
- 1/4 cup fresh basil leaves
- Salt and black pepper to taste
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic glaze
Instructions
- Slice the avocados in half, remove the pit, and scoop out a little extra flesh to make room for stuffing.
- In a bowl, mix halved cherry tomatoes, mozzarella balls, salt, and pepper.
- Fill the avocado halves with the tomato and mozzarella mixture.
- Tear fresh basil leaves over the top and drizzle with balsamic glaze and olive oil.
- Serve immediately or chill for 10 minutes before serving.
Notes
Use ripe avocados for the best flavor. Add grilled chicken or white beans for extra filling.
