Description

Chicken Cranberry Pinwheels are a colorful, no-bake appetizer made with shredded chicken, sweet dried cranberries, creamy feta, toasted pecans, and cream cheese – all rolled into soft tortillas. They’re festive, flavorful, and make-ahead friendly.


Ingredients

• 4 oz cream cheese, softened

• 1/3 cup mayonnaise

• 1 tsp Dijon mustard

• 3 cups shredded cooked chicken

• 1/4 cup finely chopped celery

• 2 sliced green onions

• 2/3 cup dried cranberries

• 1/2 cup chopped toasted pecans

• 1/3 cup crumbled feta cheese

• Salt and pepper to taste

• 4 large flour tortillas


Instructions

1. In a large bowl, mix cream cheese, mayonnaise, and Dijon mustard until smooth.

2. Stir in chicken, celery, green onions, cranberries, pecans, and feta.

3. Season with salt and pepper to taste.

4. Warm tortillas in the microwave for 20 seconds under a damp paper towel.

5. Spread 1/4 of the mixture onto each tortilla. Roll tightly.

6. Wrap each tortilla in plastic wrap and refrigerate for at least 1 hour.

7. Slice into 1-inch pinwheels and serve chilled or at room temperature.

Notes

– If you make these pinwheels ahead of time, it’s best to wait and slice them shortly before serving.

– Can be made up to 48 hours in advance if stored tightly wrapped in plastic wrap.

– Do not freeze – the cream cheese filling may separate once thawed.

– You can substitute turkey for chicken for a post-holiday twist.

– Pecans can be replaced with walnuts or toasted almonds.
