Ingredients
For the Noodles & Chicken:

1 pound (450g) skinless, boneless chicken thighs, cut into bite-sized pieces

2 teaspoons sesame oil

15 oz (425g) wonton mein noodles (or ramen noodles)

4 cups frozen stir-fry vegetables, thawed
For the Teriyaki Sauce:

⅓ cup low-sodium soy sauce

¼ cup mirin (Japanese sweet wine)

¼ cup sake (Japanese rice wine)

2 tablespoons brown sugar

5 cloves garlic, minced
-
1 teaspoon fresh ginger, minced

1 pinch red pepper flakes (optional, for a little heat!)
For Cooking:

¼ teaspoon freshly ground black pepper

Instructions

Cook the Chicken – Season the chicken with salt and pepper. Heat sesame oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 3–5 minutes until browned. Remove from the skillet and set aside.

Prepare Noodles & Veggies – Bring a pot of water to a boil. Add the noodles and frozen vegetables, cooking for about 3 minutes or until the noodles are tender. Drain and set aside.

Make the Teriyaki Sauce – In a bowl, whisk together soy sauce, mirin, sake, brown sugar, garlic, ginger, and red pepper flakes.

Combine Everything – In the same skillet, heat vegetable oil over medium. Add the teriyaki sauce and let it simmer for about 3 minutes until thickened. Return the chicken to the pan and coat with sauce.

Toss with Noodles – Add the drained noodles and veggies to the skillet. Stir-fry for another 2 minutes until everything is coated and heated through.
