Description
Chicken with Peaches and Thyme-Infused Honey-Lemon Sauce is a sweet and savory 30-minute one-pan summer dinner. Juicy chicken thighs seared to perfection and served with fresh peaches in a buttery honey-lemon glaze with thyme.
Ingredients
Chicken
1.4 lb chicken thighs boneless skinless
½ teaspoon chili powder or more
1 teaspoon Italian seasoning
salt and pepper to taste
2 tablespoons olive oil
Peaches
2 yellow peaches medium size, thoroughly washed, cored, and sliced
3 tablespoons honey or more
½ lemon (half a lemon freshly squeezed or more)
2 tablespoons butter
Instructions
1. Season chicken thighs with chili powder, Italian seasoning, salt, and pepper.
2. Heat a skillet over medium heat for 2 minutes. Add olive oil.
3. Place chicken in skillet and cook for 5 minutes without moving.
4. Flip the chicken, reduce heat to low-medium, and cook another 5–7 minutes until fully cooked. Remove chicken and set aside.
5. Add sliced peaches to the same skillet. Cook gently for 5 minutes.
6. Add honey, lemon juice, and butter. Stir until sauce forms.
7. Return chicken to skillet, nestling it among the peaches. Reheat briefly.
8. Garnish with fresh thyme and serve hot.
Notes
– Substitute nectarines or plums for peaches if desired.
– Chicken breasts can be used instead of thighs; adjust cooking time.
– Add a splash of chicken broth if the sauce gets too thick while reheating.
– Dried thyme can be used in place of fresh, though fresh is preferred.
– Best enjoyed fresh. Not recommended for freezing.
