  • 200g (7oz) baby spinach


Instructions

  • Season & Cook the Chicken:

    • In a bowl, toss the chicken chunks with salt, thyme, and black pepper until evenly coated.

    • Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden and just cooked through. Remove from the pan and cover with foil to keep warm.

  • Sauté the Garlic & Deglaze the Pan:

    • In the same skillet, add the minced garlic and sauté for 1 minute, stirring constantly to prevent burning.

    • Pour in the chicken stock and white wine vinegar, scraping up any browned bits from the pan. Simmer for about 1 minute, allowing the liquid to reduce by half.

  • Make the Creamy Parmesan Sauce:

    • Reduce the heat to low and stir in the heavy cream and red pepper flakes (if using). Let the sauce simmer until slightly thickened.

    • Add the grated parmesan cheese and stir until fully melted and smooth.

  • Combine Everything:

    • Return the cooked chicken to the pan along with the baby spinach. Stir well and cook for another 1-2 minutes, just until the spinach wilts and the chicken is heated through.
