Description

These Crispy Crostini with Balsamic Roasted Cranberries and Creamy Brie are the ultimate holiday appetizer — fun, festive, and full of flavor! Buttery toasted baguette slices are topped with melty brie and sweet-tangy balsamic roasted cranberries, all finished with a touch of rosemary.   • 2 tablespoons melted butter

  • 2 tablespoons olive oil

  • 1/2 French baguette, sliced thinly

  • 12 ounces fresh cranberries

  • 2 tablespoons balsamic vinegar

  • 1/2 cup sugar

  • 1 tablespoon fresh rosemary, chopped

  • 4 ounces triple cream brie, sliced

  • Optional garnish: fresh thyme or orange zest


Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a small bowl, mix the melted butter and olive oil. Brush both sides of the baguette slices and lay them out on a baking sheet. Set aside.

  3. In another bowl, toss together the cranberries, balsamic vinegar, sugar, and chopped rosemary. Spread onto a parchment-lined baking sheet.

  4. Roast the cranberries in the oven for 5 minutes.

  5. After 5 minutes, add the tray of baguette slices to the oven. Roast both trays for another 6 minutes.

  6. Flip the baguette slices and continue roasting for an additional 4–6 minutes, or until golden and crispy. Remove both trays from the oven.

  7. Assemble the crostini by placing a slice of brie on each toasted baguette. Top with a spoonful of roasted cranberries.

  8. Garnish with fresh thyme or orange zest if desired.

  9. Serve warm or at room temperature and enjoy every bite!

Notes

  • These can be partially made ahead! Toast the crostini and roast the cranberries up to 1 day in advance. Assemble just before serving.

  • Frozen cranberries work great — no need to thaw.

  • Swap in goat cheese or camembert for a delicious twist.

  • Add a drizzle of honey over the top if you like a little extra sweetness!
