Ingredients

1 can (15 ounces) chickpeas, rinsed and drained, or 1 ½ cups cooked chickpeas

1 tablespoon olive oil

⅛ teaspoon fine salt

¼ teaspoon curry powder

¼ teaspoon chili powder + pinch of cayenne

½ teaspoon pumpkin spice blend

Instructions

Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.

Pat the chickpeas as dry as possible using a clean tea towel or paper towels. Remove any loose skins, but no need to peel them all.

Spread chickpeas out evenly on the baking sheet.

Roast for 20–25 minutes, shaking the pan every 10 minutes. Chickpeas should be golden and starting to crisp.

Turn off the oven, give them one final shake, and let them rest in the oven for 10–15 minutes. This helps them get extra crispy.
