Ingredients
• 1 large English cucumber (or 2 Persian cucumbers)
• 1 cup cottage cheese (full-fat or low-fat)
• 1 tablespoon fresh dill or chives, finely chopped
• 1 teaspoon lemon juice
• Salt and black pepper to taste
• Optional: red pepper flakes, garlic powder, or paprika for flavor
Instructions
1. Wash and dry the cucumber. Slice into long, thin ribbons using a mandoline or vegetable peeler.
2. Pat cucumber ribbons dry with a paper towel to prevent sogginess.
3. In a bowl, mix cottage cheese with herbs, lemon juice, salt, and pepper. Add optional seasonings if desired.
4. Lay two or three cucumber slices overlapping slightly. Place a spoonful of the cheese mixture at one end.
5. Roll the cucumber slices around the filling to form a wrap.
6. Repeat until all filling is used. Chill for 10 minutes or serve immediately.
7. Garnish with extra herbs or drizzle with olive oil if serving on a platter.
