  • 1 cup broccoli florets

  • 1 zucchini, chopped

  • 1 cup bell pepper, chopped (any color)

  • 1/2 onion, chopped

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 tablespoon Cajun seasoning

  • 1 tablespoon Italian seasoning

  • 1/2 teaspoon salt (or 1 crumbled bouillon cube)

  • 1/2 teaspoon black pepper

  • 1 tablespoon fresh parsley, chopped (for garnish)

  • 1/2 teaspoon red chili pepper flakes (optional)


Instructions

  • Preheat your air fryer to 400ºF (200ºC).

  • While the air fryer heats up, chop chicken and veggies into even, bite-sized pieces.

  • In a large mixing bowl, combine the chicken, veggies, olive oil, garlic, Cajun seasoning, Italian seasoning, salt, and pepper. Toss until everything is well coated.

  • Place the mixture into the air fryer basket in an even layer.

  • Cook for 10 minutes, shaking the basket halfway through, until the chicken is cooked through (165ºF internal temp) and the veggies are lightly charred.
