These pinwheels feature soft tortillas rolled with cream cheese, dried cranberries, chopped spinach, toasted nuts, and a drizzle of honey. Perfect for potlucks, holiday spreads, or as a Christmas Eve snack platter.
Ingredients
• 4 large flour tortillas
• 8 oz (225 g) cream cheese, softened
• 1/2 cup (60 g) dried cranberries
• 1/2 cup (60 g) finely chopped fresh spinach
• 1/4 cup (30 g) chopped walnuts or pecans
• 2 tbsp (30 ml) honey or maple syrup
• 1/4 tsp salt
• Optional: Zest of 1 orange
Instructions
1. In a mixing bowl, combine softened cream cheese, chopped spinach, dried cranberries, chopped nuts, honey, salt, and optional orange zest. Mix until smooth and evenly combined.
2. Lay one tortilla flat. Spread 1/4 of the mixture evenly across the tortilla, reaching to the edges.
3. Roll the tortilla tightly into a log. Repeat with remaining tortillas.
4. Wrap each roll tightly in plastic wrap and refrigerate for at least 30 minutes.
5. Unwrap and slice each roll into 3/4-inch pieces using a sharp knife.
6. Arrange on a platter and serve chilled or at room temperature.
Notes
– Make up to 24 hours ahead for best results — chill well before slicing.
– Swap cranberries for dried cherries or raisins if preferred.
– Walnuts, pecans, or slivered almonds all work well.
– Use gluten-free or low-carb tortillas if needed.
– Do not freeze — cream cheese texture changes after freezing.
