Ingredients
• For the Cottage Cheese Crust:
• 1 cup cottage cheese
• 2 large eggs
• ½ cup almond flour (or oat flour for a lighter texture)
• 1 tsp baking powder
• Pinch of salt

• For the Topping:
• 1 cup fresh spinach, chopped
• 2–3 cloves garlic, minced
• ½ cup shredded mozzarella cheese
• 2 tbsp grated Parmesan cheese
• ½ tsp olive oil
• Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a medium bowl, mix cottage cheese, eggs, almond flour, baking powder, and salt until smooth.
3. Spread mixture into a 1/4-inch thick circle or rectangle on the lined baking sheet. Bake for 18–20 minutes until edges are golden and center is set.
4. Meanwhile, heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds, then add chopped spinach. Cook until just wilted. Season with salt and pepper.
5. Remove crust from oven. Spread spinach and garlic mixture evenly over the crust.
6. Top with shredded mozzarella and Parmesan cheese.
7. Return to oven and bake for another 8–10 minutes until cheese is melted and bubbly.
8. Let cool slightly before slicing and serving.
