Garlic Butter Roasted Beet Slices are a rich, savory, and simple side dish. With caramelized edges and a buttery garlic herb finish, these oven-roasted beets are comforting, vibrant, and naturally delicious.
Ingredients
• 4 medium beets, peeled and sliced into 1/4-inch rounds
• 3 tablespoons unsalted butter, melted
• 2 garlic cloves, minced
• 1 tablespoon olive oil
• 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
• Salt and freshly ground black pepper, to taste
• Optional: chopped parsley or chives for garnish
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a small bowl, combine melted butter, olive oil, garlic, thyme, salt, and pepper.
3. Slice peeled beets into 1/4-inch rounds and arrange them in a single layer on the baking sheet.
4. Brush both sides of each beet slice generously with the garlic butter mixture.
5. Roast for 30–35 minutes, flipping once halfway through, until the beets are tender and caramelized at the edges.
6. Remove from oven and garnish with fresh parsley or chives before serving warm.

– Golden or Chioggia beets can be used for variety and color.
