Description

Greek Feta Salad Tower is a beautifully layered Mediterranean salad featuring romaine, tomatoes, cucumber, red onion, crumbled feta, homemade croutons, and a zesty red wine vinaigrette. Perfect for light lunches or party starters.


Ingredients

• 2 cups chopped romaine lettuce

• 1 cup cherry tomatoes, halved

• 1/2 cup sliced cucumber

• 1/2 cup sliced red onion

• 1/2 cup crumbled feta cheese

• 2 cups cubed bread

• 2 tbsp olive oil

• 1 tsp dried oregano

• 1 tsp garlic powder

• 1/4 cup olive oil (for dressing)

• 2 tbsp red wine vinegar

• 1 tsp dried oregano (for dressing)

• 1 tsp garlic powder (for dressing)

• Salt and pepper, to taste

• Fresh parsley (optional)

• Lemon wedges (optional)


Instructions

1. Preheat oven to 375°F (190°C).

2. Toss cubed bread with olive oil, oregano, and garlic powder. Spread on baking sheet and bake for 10–15 minutes until golden.

3. In a bowl, combine chopped romaine, tomatoes, cucumber, onion, and feta cheese. Toss gently.

4. Whisk together olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper for dressing.

5. In clear serving glasses, layer salad, croutons, and a drizzle of dressing. Repeat until full.

6. Top with fresh parsley and a lemon wedge. Serve immediately.

Notes

– Use day-old bread for crunchier croutons.

– Store dressing separately if prepping ahead.

– For a vegan version, use plant-based feta.

– Add olives or chickpeas for extra flavor and protein.

– Don’t layer croutons too early to keep them crisp.
