1 pound ground turkey

1.5 tablespoons ground cumin

1 teaspoon chili powder

1 cup onion, diced

1 yellow bell pepper, diced

3 small or 2 large sweet potatoes, peeled and diced (about 3 cups)

½ cup water

½ cup mozzarella cheese, shredded

¼ cup fresh cilantro, chopped
Instructions

Heat a large cast iron skillet over medium-high heat. Add the olive oil and minced garlic. Sauté for 1 minute until fragrant.

Add the ground turkey. Use a wooden spoon to break it apart and cook for about 8 minutes, until browned.

Stir in cumin, chili powder, salt, and pepper. Mix thoroughly to coat the meat in spices.

Add diced onion and bell pepper, and cook for another 3–4 minutes until they begin to soften.

Add the diced sweet potatoes and pour in the water. Stir, then cover the skillet with a lid. Cook for 6–8 minutes, until the sweet potatoes are fork-tender. Stir occasionally and add more water if needed to keep the pan from drying out.

Remove the lid, season to taste with extra salt and pepper if desired, and sprinkle the shredded mozzarella evenly on top. Let it melt.

Remove from heat, top with fresh cilantro, and serve warm.
