Ingredients
- Chicken thighs or breasts (bite-sized pieces)
- Fresh pineapple chunks (or canned)
- Bell peppers (red, yellow, orange)
- Red onion (or sweet onion)
- Soy sauce
- Garlic
- Honey
- Salt and pepper
- Chili flakes (optional)
Instructions
- Preheat the oven to 425°F.
- In a bowl, toss chicken chunks with soy sauce, garlic, and honey. Let marinate for 5 minutes.
- Spread chicken, pineapple, bell peppers, and onion on a lined baking sheet in a single layer.
- Pour the leftover marinade over the mixture.
- Bake for about 25 minutes, stirring halfway through. Broil for 2 minutes at the end for crispy edges.
