Description

A quick and easy grilled chicken recipe with a tangy honey and pineapple marinade that delivers juicy, flavorful results every time.


Ingredients

  • 4 chicken breasts or thighs
  • 1/2 cup pineapple juice
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lemon or lime (optional)

Instructions

  1. Mix honey, pineapple juice, soy sauce, olive oil, and minced garlic in a bowl and whisk until smooth.
  2. Toss the chicken in the marinade and let it sit for 1 hour (or overnight for deeper flavor).
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for about 6-7 minutes per side, until cooked through and grill marks appear.
  5. Stop basting with marinade 5 minutes before removing the chicken from the grill.
  6. If desired, grill pineapple rings alongside the chicken.

Notes

Leftover chicken can be stored in the fridge for 3-4 days. Reheat with a splash of pineapple juice to maintain moisture.
