- 4 chicken breasts or thighs
- 1/2 cup pineapple juice
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Juice of 1 lemon or lime (optional)
Instructions
- Mix honey, pineapple juice, soy sauce, olive oil, and minced garlic in a bowl and whisk until smooth.
- Toss the chicken in the marinade and let it sit for 1 hour (or overnight for deeper flavor).
- Preheat the grill to medium-high heat.
- Grill the chicken for about 6-7 minutes per side, until cooked through and grill marks appear.
- Stop basting with marinade 5 minutes before removing the chicken from the grill.
- If desired, grill pineapple rings alongside the chicken.
Notes
Leftover chicken can be stored in the fridge for 3-4 days. Reheat with a splash of pineapple juice to maintain moisture.
