Ingredients
• 2 large sweet potatoes, peeled and cubed (1-inch)
• 2 tablespoons olive oil
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/2 teaspoon ground cinnamon (optional)
• 2 tablespoons honey
• 1/2 cup crumbled feta cheese
• 1/3 cup pecan halves, roughly chopped
• Fresh thyme leaves (optional, for garnish)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, toss sweet potato cubes with olive oil, salt, pepper, and cinnamon until coated.
