Description

A delightful lemon zucchini bread that combines fresh zucchini with bright lemon zest for a moist and flavorful treat.


Ingredients

  • 2 cups grated zucchini
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the grated zucchini, sugar, and oil. Mix well.
  3. Add in the eggs one at a time, mixing thoroughly after each addition.
  4. In another bowl, combine flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the lemon zest and vanilla extract.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure to grate the zucchini finely and do not peel it. Let the bread cool completely before slicing to prevent it from crumbling.
