Description

This Mediterranean flatbread with whipped feta and fresh herbs is a vibrant, fresh, and satisfying dish. Crisp flatbread layered with creamy feta and colorful veggies makes a stunning appetizer or light meal.


Ingredients

• 1 cup crumbled feta cheese

• 1/4 cup Greek yogurt or cream cheese

• 1 tbsp olive oil

• 1 clove garlic, minced

• 1 tbsp lemon juice

• Black pepper, to taste

• 2 naan or flatbread rounds

• 1/2 cup cherry tomatoes, halved

• 1/2 cup diced cucumber

• 1/4 cup sliced Kalamata olives

• 1/4 cup chopped roasted red peppers

• 1/4 red onion, thinly sliced

• 2 tbsp chopped fresh parsley

• 1 tbsp chopped mint or dill (optional)

• Olive oil for drizzling

• Optional garnishes: microgreens, pine nuts, or za’atar


Instructions

1. In a food processor, combine feta, yogurt, olive oil, minced garlic, lemon juice, and black pepper. Blend until smooth and creamy.

2. Preheat oven to 400°F (200°C). Place flatbreads on a baking sheet and warm for 6–8 minutes until crisp.

3. Spread the whipped feta evenly over the warm flatbreads.

4. Top with cherry tomatoes, cucumber, olives, roasted red peppers, and red onion.

5. Sprinkle fresh parsley and optional mint or dill over the toppings.

6. Drizzle with olive oil and add any optional garnishes like pine nuts, microgreens, or za’atar.

7. Slice and serve immediately while warm.

Notes

– Use feta from a block in brine for the creamiest whipped texture.

– Customize toppings with artichokes, capers, or your favorite vegetables.

– To make gluten-free, use a gluten-free flatbread.
