Mediterranean Beet, Feta & Walnut Galette is a savory, flaky dish filled with roasted beets, creamy feta, toasted walnuts, and thyme, wrapped in golden pie crust. Perfect as a vegetarian main, light lunch, or elegant appetizer.
Ingredients
• 1 pre-made or homemade pie crust (9–10 inches)
• 2 medium beets, roasted and thinly sliced
• 1/2 cup crumbled feta cheese
• 1/3 cup chopped toasted walnuts
• 1/4 red onion, thinly sliced
• 1 tablespoon fresh thyme leaves (or 1/2 tsp dried thyme)
• 1 tablespoon olive oil
• 1 egg, beaten (for egg wash)
• Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Roll out the pie crust into a 12-inch circle on a floured surface. Transfer to the prepared baking sheet.
3. Layer sliced beets in the center, leaving a 2-inch border.
4. Top with red onion, feta, walnuts, thyme, salt, and pepper. Drizzle olive oil over the filling.
5. Fold the outer edges of the crust over the filling, pleating to form a rustic edge.
6. Brush crust edges with the beaten egg for a golden finish.
7. Bake for 30–35 minutes until the crust is golden and filling is tender.
8. Let cool for 5 minutes before slicing and serving.
