Description

This Mediterranean Bowl with Turkey Meatballs is the perfect quick and healthy weeknight dinner! Juicy, garlicky ground turkey meatballs are paired with fluffy rice or couscous, crisp cucumbers, kalamata olives, and a generous dollop of creamy tzatziki. It’s fresh, hearty, and on the table in just 25 minutes. Great for meal prep, customizable for different diets, and anything but boring!!

Ingredients

Scale

For the Turkey Meatballs:

  • 1 pound ground turkey

  • ½ cup Italian breadcrumbs (or blanched almond flour for gluten-free option)

  • ¾ cup yellow onion, finely chopped

  • 1 large egg

  • 2 teaspoons garlic, minced

  • ½ teaspoon kosher salt

  • ¼ teaspoon black pepper

For the Mediterranean Bowl:

  • Cooked rice or pearl couscous (or cauliflower rice for low-carb)

  • Chopped cucumbers

  • Kalamata olives

  • Tzatziki sauce (store-bought or homemade)

  • Fresh dill

  • Lemon wedges or slices

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Mix meatball ingredients in a large bowl—ground turkey, breadcrumbs (or almond flour), onion, egg, garlic, salt, and pepper—until just combined.

  3. Roll into 2-inch balls, about 2 tablespoons each. You’ll get around 16 meatballs.

  4. Bake for 15 minutes. Turn broiler on high for the last 2–3 minutes to get golden tops. (Or air fry at 375°F for 10–12 minutes, shaking halfway through!)

  5. Assemble bowls with rice or couscous, meatballs, cucumber, olives, tzatziki, fresh dill, and a squeeze of lemon on top.

  6. Serve warm and enjoy that fresh, zesty goodness!

Notes

  • Make it ahead: Meatballs can be prepped in advance and stored in the fridge for up to 4 days or frozen for 3 months.

  • Dairy-free option: Swap tzatziki with hummus or a dairy-free yogurt dip.

  • Low-carb tip: Serve with cauliflower rice and skip the couscous.

  • More veggies? Go for it! Cherry tomatoes, shredded carrots, or arugula would be delish.

  • Pro tip: Use a cookie scoop for even-sized meatballs!
