Description

Mediterranean Spinach Grilled Cheese is a fast, flavor-packed vegetarian sandwich filled with sautéed spinach, sun-dried tomatoes, and gooey feta and cheddar cheese. Perfect for busy weeknights or weekend lunches.


Ingredients

• ½ tablespoon olive oil

• 2 cups spinach leaves

• Pinch of salt

• 4 slices bread

• 2 tablespoons butter, softened

• 6–8 pieces sun-dried tomatoes, chopped

• ½ cup crumbled feta cheese

• ¼ cup shredded cheddar cheese

• Pinch of oregano

• Pinch of crushed chili flakes

• Honey, optional for serving


Instructions

1. Heat olive oil in a non-stick pan over medium heat. Add spinach and sauté for 5–6 minutes until wilted. Sprinkle with salt and remove from pan.

2. Butter one side of each bread slice. Place two slices butter-side-down on the pan.

3. Distribute chopped sun-dried tomatoes on the bread. Press lightly.

4. Add half of the feta and cheddar cheeses, then layer the cooked spinach.

5. Top with the remaining feta and cheddar. Sprinkle oregano and chili flakes.

6. Close sandwiches with remaining bread slices, butter side up.

7. Cook over medium heat for 4–5 minutes per side, until golden and cheese is melted.

8. Serve hot with a drizzle of honey if desired.

Notes

– Use mozzarella or provolone for a milder cheese flavor.

– Frozen spinach works well—just thaw and squeeze dry before cooking.

– Try sourdough, ciabatta, or multigrain for heartier texture.

– Pair with tomato soup or a fresh Greek salad.

– Not suitable for freezing; best enjoyed immediately.
