Description

Melty Blackberry Jalapeño Stuffed Chicken is a flavor-packed dinner that combines juicy chicken breasts, sweet blackberries, spicy jalapeños, and gooey melted cheese — all baked to perfection with a splash of white wine or broth.


Ingredients

• 4 boneless skinless chicken breasts

• 2 teaspoons oregano or Italian seasoning

• 1 teaspoon garlic powder

• Sea salt and black pepper, to taste

• 1 cup fresh blackberries, slightly mashed

• 4 small jalapeño peppers, thinly sliced, most seeds removed

• 4 thick slices mozzarella or provolone cheese

• 2 tablespoons avocado oil or olive oil

• 1/2 cup dry white wine or chicken bone broth

• Handful of fresh parsley or basil, chopped (for garnish)


Instructions

1. Preheat oven to 375°F (190°C).

2. Rub chicken breasts with oregano, garlic powder, salt, and pepper on all sides.

3. Slice each chicken breast lengthwise to create a pocket (don’t cut all the way through).

4. Stuff each pocket with a slice of cheese, jalapeño slices, and a spoonful of mashed blackberries.

5. Secure the opening with toothpicks if needed.

6. Heat oil in an oven-safe skillet over medium heat. Sear chicken for 4 minutes per side until golden-brown.

7. Add wine or broth to deglaze the skillet and enhance flavor.

8. Transfer skillet to the oven and bake for 12–15 minutes, or until chicken reaches 165°F internally.

9. Remove toothpicks, garnish with parsley or basil, and serve hot.

– Use provolone or mozzarella for a creamy, mild flavor — or try goat cheese for a tangy twist.

– Fresh or thawed frozen blackberries both work well.

– Adjust jalapeño quantity and seeds to control the heat.

– Chicken broth can replace white wine for an alcohol-free version.

– Leftovers reheat well the next day — store in an airtight container for up to 3 days.
