Description

Oven Roasted Tomatoes and Burrata with Hot Honey is a vibrant, creamy, and slightly spicy summer appetizer that comes together in just 35 minutes with simple ingredients like cherry tomatoes, garlic, burrata cheese, and hot honey.


Ingredients

• 16 oz tricolor cherry tomatoes

• 3 tbsp extra virgin olive oil, plus more for drizzling

• 1 tsp dried oregano

• 1 tsp dried basil

• Salt and pepper to taste

• 2 cloves garlic, chopped

• 1 tbsp hot honey, or to taste (Trader Joe’s brand used)

• 1 8-oz ball of burrata

• 1 baguette, sliced and toasted


Instructions

1. Preheat oven to 400°F (200°C).

2. Add tomatoes, garlic, oregano, basil, salt, and pepper to a small baking dish.

3. Drizzle with olive oil and toss to evenly coat.

4. Roast in the oven for 30 minutes, until tomatoes are blistered and juicy.

5. Transfer roasted tomatoes to a serving bowl.

6. Place the burrata ball in the center of the warm tomatoes.

7. Drizzle hot honey and extra olive oil over everything.

8. Finish with cracked pepper and serve with toasted baguette slices.

– Make it gluten-free by using gluten-free toast or crackers.
