Description
Pistachio-Crusted Brie Bites with Raspberry Honey Glaze are elegant, festive appetizers featuring creamy brie, crunchy pistachios, and a bright raspberry honey drizzle. Perfect for holiday gatherings or cozy nights in.
Ingredients
• 1 wheel Brie cheese (8 oz / 225 g), cut into 1-inch cubes
• ½ cup crushed pistachios (60 g)
• 1 tbsp olive oil (15 ml)
• 12–16 mini phyllo cups or sturdy crackers
• ¼ cup raspberry preserves (80 g)
• 1 tbsp honey (15 ml)
• 1 tsp lemon juice (5 ml)
• Extra crushed pistachios (optional garnish)
• Fresh thyme or rosemary (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and place mini phyllo cups on the tray.
2. Toss Brie cubes in olive oil, then coat each in crushed pistachios. Place one cube into each phyllo cup.
3. In a small saucepan over low heat, combine raspberry preserves, honey, and lemon juice. Stir until smooth.
4. Bake the filled cups for 8–10 minutes, or until Brie is soft and edges of phyllo are golden.
5. Remove from oven and drizzle each bite with warm glaze. Garnish with extra pistachios and herbs if desired. Serve warm.
Notes
– Use seedless raspberry preserves for a smoother glaze.
– Phyllo cups can be substituted with crackers or toasted baguette slices.
– To prep ahead, assemble and chill—then bake and glaze just before serving.
– Avoid freezing; the texture of Brie and phyllo does not hold up well.
– For a vegan version, use plant-based Brie and maple syrup in place of honey.
