Description
Pomegranate Pistachio Whipped Feta is a creamy, tangy, and lightly sweet Mediterranean dip topped with jewel-like pomegranate seeds, crunchy pistachios, and a drizzle of honey. It’s the perfect 15-minute party starter!
Ingredients
• 8 ounces crumbled feta cheese
• 4 ounces cream cheese
• 1/2 cup plain Greek yogurt
• 3 tablespoons honey
• 1/4 cup roughly chopped pistachios
• 1 teaspoon lemon zest
• 1/4 teaspoon dried basil
• 1/4 teaspoon dried dill
• 1/2 cup pomegranate seeds
• 1/4 cup roughly chopped pistachios (for topping)
• 1 tablespoon honey (for topping)
• 1 teaspoon lemon zest (for topping)
• Pita chips, crackers, or sliced baguette for serving
Instructions
1. In a food processor, blend feta cheese, cream cheese, Greek yogurt, honey, 1/4 cup pistachios, 1 teaspoon lemon zest, basil, and dill until smooth and creamy, about 1 minute.
2. Stop halfway to scrape down the sides, then continue blending until fully combined.
3. Transfer whipped mixture into a shallow serving bowl and create decorative swirls on top with the back of a spoon.
4. Top with pomegranate seeds, additional pistachios, honey drizzle, and lemon zest.
5. Serve with pita chips, crackers, or toasted baguette slices.
Notes
– No food processor? Use a high-speed blender or hand mixer. Add feta gradually if needed.
– Soften cream cheese to room temperature for a smoother blend.
– Try walnuts or almonds if pistachios aren’t available.
– Dried cranberries or chopped fresh figs can be used instead of pomegranate seeds.
– Refrigerate leftovers for up to 4 days; let sit at room temp before serving.
