Description

Roasted Beet Blue Cheese Towers combine sweet roasted beets with tangy blue cheese, honey, and toasted walnuts for a stunning, creamy, earthy appetizer you’ll crave year-round.


Ingredients

• 3 medium beets, peeled and sliced into 1/4-inch rounds

• 2 tablespoons olive oil

• Salt and black pepper, to taste

• 4 oz creamy blue cheese (or Gorgonzola), softened

• 1/4 cup sour cream or Greek yogurt

• 1 tablespoon lemon juice

• 1/3 cup chopped toasted walnuts

• 1 tablespoon honey

• Fresh thyme leaves or microgreens, for garnish


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Toss beet slices with olive oil, salt, and pepper. Arrange in a single layer on the sheet.

3. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized. Cool slightly.

4. In a bowl, mix blue cheese, sour cream or yogurt, and lemon juice until creamy.

5. On a platter, layer beet slices with dollops of cheese mixture. Stack 2–3 slices high.

6. Drizzle towers with honey and sprinkle with chopped toasted walnuts.

7. Garnish with fresh thyme or microgreens. Serve chilled or at room temperature.

Notes

– Use gloves when slicing beets to avoid stains.

– You can substitute goat cheese or feta if you prefer milder flavors.

– Maple syrup works beautifully in place of honey.

– For a vegan version, try cashew cream and omit the cheese.

– Best enjoyed fresh but beet slices can be prepped 1–2 days in advance.
