Roasted Strawberry Whipped Ricotta Toast is a quick, creamy, and elegant 30-minute recipe layered with whipped ricotta, honey-roasted strawberries, and thyme on crusty bread. Perfect for breakfast, brunch, or a light snack.
Ingredients
• 1 pound strawberries, ends removed
• 2 tablespoons honey
• ½ lemon, juiced
• 4 sprigs fresh thyme, plus extra for garnish
• 2 slices rustic bread, 1-inch thick
• 1 tablespoon olive oil
• ¾ cup whole milk ricotta cheese
• Pinch of sea salt
Instructions
1. Preheat oven to 400°F.
2. Place strawberries in a baking dish. Drizzle with honey, add lemon juice, and top with thyme. Roast for 20 minutes, stirring once.
3. Brush bread with olive oil and toast in the oven for 1–2 minutes until golden.
4. Place ricotta and a pinch of sea salt in a food processor and blend until smooth and fluffy.
5. Spread whipped ricotta on each toast slice.
6. Spoon roasted strawberries over the ricotta and drizzle with leftover syrup from the pan.
7. Garnish with fresh thyme and a sprinkle of sea salt. Serve immediately.
