Description
This classic Southern Squash Casserole features tender yellow squash, savory onions, creamy cheddar cheese, and a golden buttery cracker topping. A beloved comfort food, it’s the perfect side for holidays, potlucks, and cozy family dinners.
Ingredients
• 6–8 yellow squash, sliced
• 1 medium onion, chopped
• 1½ cups shredded sharp cheddar cheese
• 2 large eggs
• ¾ cup whole milk or half-and-half
• 1 cup sour cream (optional)
• 1½ cups crushed Ritz crackers, divided
• 3 tablespoons melted butter
• ½ teaspoon salt
• ¼ teaspoon black pepper
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Sauté sliced squash and onions in a skillet until tender but not mushy, about 8–10 minutes. Drain excess liquid.
3. In a large bowl, whisk together eggs, milk, sour cream (if using), salt, pepper, and 1 cup of cheese.
4. Fold in cooked squash and onions, along with 1 cup of crushed Ritz crackers.
5. Pour mixture into the prepared baking dish and spread evenly.
6. Top with remaining cheese. Mix remaining crushed crackers with melted butter and sprinkle over top.
7. Bake uncovered for 35–40 minutes, until top is golden brown and casserole is bubbling.
8. Let cool for 10 minutes before serving.
