Description

A quick and easy one-pan meal featuring sweet potatoes, black beans, and rice, packed with Southwest flavors.


Ingredients

Scale
  • 2 medium sweet potatoes, diced
  • 1 can black beans, rinsed and drained
  • 2 cups cooked rice (white or brown)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 cup shredded cheese
  • Optional toppings: diced avocado, sour cream, salsa, fresh cilantro

Instructions

  1. Heat oil in a skillet over medium heat.
  2. Add diced sweet potatoes and cook until browned.
  3. Add onion and bell pepper, stirring until softened.
  4. Sprinkle in cumin, chili powder, and salt; stir well.
  5. Add black beans and cooked rice to the skillet; mix until heated through.
  6. Top with cheese and let it melt.
  7. Serve hot with desired toppings.

Notes

For added protein, feel free to incorporate leftover chicken or ground turkey. Taste as you go to adjust seasoning.
