Ingredients
• 10 oz baby spinach, fresh and washed
• 3 cups strawberries, hulled and sliced
• 1 cup blueberries
• ⅓ cup crumbled feta cheese
• 1 cup pecans, toasted (some whole, some chopped)
• 1 cup balsamic vinegar
• ¼ cup honey or brown sugar
Instructions
1. In a small saucepan, combine balsamic vinegar and honey. Bring to a gentle boil over medium heat.
2. Reduce heat and simmer for about 10 minutes, stirring occasionally, until the mixture reduces by half and thickens. Remove from heat and cool.
3. In a large bowl, add baby spinach, strawberries, blueberries, and crumbled feta. Toss gently to combine.
4. Divide salad into serving bowls. Top each with a mix of whole and chopped toasted pecans.
5. Drizzle balsamic glaze over each serving and serve immediately.
