- 2 cups roasted sweet potatoes, mashed
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 unbaked pie crust
Instructions
- Preheat the oven to 350°F (175°C).
- Roast sweet potatoes until tender, then mash until smooth.
- In a mixing bowl, combine the mashed sweet potatoes with sugar, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt.
- Mix until well combined, making sure there are no lumps.
- Pour the mixture into the unbaked pie crust.
- Bake in the preheated oven for 45 to 50 minutes, or until the edges are set and the center wiggles slightly.
- Remove from oven and allow to cool, then refrigerate for optimal flavor.
Notes
Letting the pie sit in the fridge overnight enhances the flavor. Serve chilled or at room temperature.
