Ingredients

• 3–4 tomatoes, sliced into 1/3 inch rounds

• 1 tbsp baby capers or chopped regular capers

• A few canned or jarred artichoke hearts, roughly chopped

• 1/4 red onion, finely sliced

• 1 1/2 tsp salt flakes

• Freshly ground black pepper, to taste

• 2 tbsp extra virgin olive oil

• Juice of 1/2 lemon

• 2 tbsp fresh oregano leaves (or substitute basil or parsley)


Instructions

1. Arrange tomato slices on a large plate, slightly overlapping each piece.

2. Scatter the chopped artichokes, thin red onion slices, and capers over the tomatoes.

3. Sprinkle salt flakes and freshly ground black pepper across the salad.

4. Drizzle with olive oil and squeeze the juice of half a lemon over the top.

5. Finish with fresh oregano leaves scattered generously.

6. Let the salad rest for 5 minutes before serving to allow juices to develop—but not much longer to avoid sogginess.
