Description

A sweet and savory whipped feta dip paired with roasted strawberries, perfect for parties and gatherings.


Ingredients

  • 8 oz feta cheese
  • 4 oz cream cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 1 lb fresh strawberries
  • 2 tbsp sugar (or honey/maple syrup)
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. For the roasted strawberries, slice the strawberries and place them on a baking tray.
  3. Sprinkle with sugar and drizzle with balsamic vinegar.
  4. Roast in the oven for about 20 minutes until jammy.
  5. In a blender, combine feta cheese, cream cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth, leaving some texture if desired.
  6. Once strawberries are roasted, serve them alongside the whipped feta dip with your choice of bread or veggies.

Notes

For added flavor, top with pistachios, mint, or a swirl of hot honey. This dip also works well with grilled meats or as a late-night snack.
